Miso Salmon Stir Fry

Always cook fish to an internal temperature of 145°F.
Ingredients
  • 1 package Superior Salmon
  • 2 cups cooked white or brown rice
  • 1/4 cup diced carrots
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced celery
  • 1 tbsp fresh chopped ginger
  • 1 tbsp white miso paste
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1/3 cup sliced almonds
Instructions
  1. Remove the fish from package, pat dry, and cut into 1-inch cubes.
  2. In a large frypan heat the sesame and olive oil over medium-high heat.
  3. Add the vegetables, miso and soy sauce and cook for 2-3 minutes or until veggies start to soften.
  4. Then add the salmon and almonds, toss together and continue to cook until salmon is cooked through.
  5. Serve over the heated cooked rice.
