Lemon Coconut Crunch Salmon

The Recipe Makes: 2 generous servings

Approximate Cook and Prep Time: 35 minutes

Here’s What You Will Need:

1 package of Superior Select VSP Atlantic Salmon
2 Tablespoons prepared lemon curd
1/4 cup unsweetened shredded coconut
2 Tablespoons fresh cut green onions
1/4 cup crushed macadamia nuts
1 teaspoon smoked paprika

Here’s How You Do It:

Preheat oven to 410 degrees
Remove fish from the package, pat dry, and season with salt and pepper
Place fish on a greased baking sheet and top with lemon curd
In a small bowl combine the remaining ingredients and press unto the lemon coated fish
Bake in the oven until lightly browned and fish begins to flake approximately 12-15 minutes
Serve with your favorite side dish!
