Lemon Coconut Crunch Salmon

Always cook fish to an internal temperature of 145°F.
  • 1 package Superior Salmon
  • 2 tbsp prepared lemon curd
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp fresh cut green onions
  • 1/4 cup crushed macadamia nuts
  • 1 tsp smoked paprika
  1. Preheat oven to 400°F.
  2. Remove fish from the package, pat dry, and season with salt and pepper.
  3. Place fish on a greased baking sheet and top with lemon curd.
  4. In a small bowl combine the remaining ingredients and press onto the lemon coated fish.
  5. Bake in the oven until lightly browned and fish begins to flake (approximately 12-15 minutes).
  6. Serve with your favorite side dish!
