Harvest Turkey Sandwich
with marinated apples, gravy mayo, bacon & aged cheddar

Ingredients
Gravy Mayo
- ½ cup chicken demi glace (Superior Foods Featured Item: #140428 – Bonewerks Culinarte’)
½ cup Mayo
Gravy Mayo
- 2 Honeycrisp apple, sliced thinly on a mandoline
- ¼ cup Apple cider vinegar
- 3 Tbsp Maple syrup
- ¼ cup Extra virgin olive oil
- 2 tsp Fresh thyme
- Salt and black pepper, to taste
Sandwich and Assembly
- 4 pieces of 6” ciabatta sandwich bread, lightly toasted or grilled (Superior Foods Featured Item: #98190 – Boulart)
- Gravy mayo
- Honey smoked turkey breast, thinly sliced (Superior Foods Featured Item: #90437 – Michigan Turkey)
- Aged cheddar slices
- Marinated apples
- Cider house bacon, cooked crisp (Superior Foods Featured Item: #90449 – Smithfield Culinary)
- Arugula
Preparation
Gravy Mayo
- In a small bowl mix together demi glace and mayo until uniform and spreadable. Set aside for sandwiches.
- In a medium bowl, combine apple cider vinegar, syrup, evoo, and thyme. Toss apple slices in mixture and add salt and pepper to taste. Toss occasionally over 20 minutes, until apples are completely marinated with flavors.
- On a cutting board lay out ciabatta slices. Spread gravy mayo on both halves generously, and starting from the bottom half add turkey, cheese, marinated apples, bacon, and arugula. Finish with top half of bread and slice in half. Serve.
