  • Suggested Pairing: A hard apple cider would go great with these notes of fennel and dill!
Always cook fish to an internal temperature of 145°F.
Ingredients
  • 1 package of Superior Cod
  • 1 cup flour
  • 1 cup thinly sliced fennel bulb
  • 1 shallot thinly sliced
  • 2 cloves of fresh garlic minced
  • Juice of 1 lemon
  • 1/4 white wine
  • 1 tbsp fresh chopped dill
  • 1/2 stick of unsalted butter
Instructions
  1. Heat a medium sized fry pan/skillet over medium-high heat.
  2. Remove the cod from package, pat dry and season with salt and pepper.
  3. Dredge the cod in the flour and shake off the excess.
  4. Add 2 tablespoons of olive oil to the pan and carefully add the fish letting it fall away from you.
  5. Cook for 1-2 minutes, when fish starts to brown flip it over and add the fennel, shallot and garlic to the pan.
  6. Cook for another 1-2 minutes or until fennel starts to brown and soften.
  7. Then add wine and lemon juice, reduce the heat to low and cover the pan.
  8. Once fish is cooked through and begins to easily flake, add the butter and fresh dill.
  9. Place the fish on a serving platter and carefully swirl the pan to incorporate the butter.
  10. Pour sauce over the fish and serve.
