Cod with Andouille Shrimp Sauce

Always cook fish to an internal temperature of 145°F.
Ingredients
  • 1 package of Superior Cod
  • 1 shallot thinly sliced
  • 2 fresh garlic cloves, minced
  • 1/2 cup cooked and diced andouille sausage
  • 1/2 cooked and diced shrimp, shell and tail removed
  • 1/4 cup heavy cream
  • 1/4 cup beef stock
Instructions
  1. Pre-heat oven to 400°F.
  2. Remove fish from package, pat dry, and season with salt and pepper.
  3. Place on a greased baking sheet and place in the oven.
  4. While fish is cooking, heat a medium saucepot over medium-high heat.
  5. Add 1 tablespoon olive oil.
  6. Add garlic and shallot and stir for 1 minute.
  7. Once the garlic starts to brown, add the remaining ingredients.
  8. Let reduce slightly and set aside.
  9. Once fish is cooked through and flakes easily apart, place on serving platter and top with sauce.
