Cheese, Fruit & Nut Pairings

Suggested Pairing: There are a lot of combinations here, but start with your favorite Riesling or Pinot Noir and work from there!

Prairie Sunset
1 Granny Smith apple
3/4 cup almonds
Aged Gouda
1 peach
3/4 cup pecans
Grand Cru Surchoix
1 Bosc pear
3/4 cup cashews
Canela
5 figs
3/4 cup walnuts
2 Tbsp extra virgin olive oil (Superior Foods Featured Item: #42402 – Soul of Creta)
1 Tbsp honey
1 tsp vinegar (white wine or rice wine)
2 tsp kosher salt
Freshly ground black pepper, to taste
Preparation
For each respective nut, roughly chop and combine with olive oil in a small skillet and set over medium heat. Cook, stirring often, until golden brown, about 3 minutes. Remove from heat and mix in honey, salt, pepper, and vinegar. Adjust flavors to taste.
Break up cheese into pieces or thinly slice. Cut fruit into wedges or slices and place on a plate or platter of your choosing. Sprinkle with salt. Add pieces of cheese, spoon over the dressed nuts, and serve.
Tips
Amounts for the dressed nuts can all be made/adjusted to taste. Keep in mind that if you’re using salted nuts you might not need to add any extra salt.
