Cajun Spiced Cod Linguine
This Recipe Makes: 2 Generous Servings
Approximate Cook and Prep Time: 35-40 minutes

Here’s What You Will Need:
1 package Superior Select Cod
12 oz. cooked linguine
2 tablespoons Cajun seasoning
1 cup chicken broth
1/2 cup heavy cream
1 pint fresh grape tomatoes
1/2 cup sliced fresh asparagus tips
1/4 cup diced sweet white onion
2 fresh garlic cloves minced
Here’s How You Do It:
Remove Cod from the package, pat dry and cut into 1-inch cubes
In a small bowl, toss cubed fish with Cajun seasoning
In a large frypan /skillet, heat 2 Tablespoons of olive oil
Add garlic and onion and cook until onions soften and begin to brown
Add fish and remaining other ingredients and reduce heat to low
Cover and simmer until fish is cooked through, flaking easily and the pasta is heated through
Stir everything together and serve with a freshly baked baguette and a squeeze of lemon.
