Cajun Spiced Cod Linguine

Always cook fish to an internal temperature of 145°F.
Ingredients
  • 1 package of Superior Cod
  • 12 oz cooked linguine
  • 2 tbsp Cajun seasoning
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 pint fresh grape tomatoes
  • 1/2 cup sliced fresh asparagus tips
  • 1/4 cup diced sweet white onion
  • 2 fresh garlic cloves, minced
Instructions
  1. Remove cod from the package, pat dry and cut into 1-inch cubes.
  2. In a small bowl, toss cubed fish with Cajun seasoning.
  3. In a large frypan/skillet, heat 2 tablespoons of olive oil.
  4. Add garlic and onion and cook until onions soften and begin to brown.
  5. Add fish and remaining other ingredients and reduce heat to low.
  6. Cover and simmer until fish is cooked through, flaking easily and the pasta is heated through.
  7. Stir everything together and serve with a freshly baked baguette and a squeeze of lemon.
