Always cook fish to an internal temperature of 145°F.
Ingredients
- 1 package of Superior Cod
- 12 oz cooked linguine
- 2 tbsp Cajun seasoning
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 pint fresh grape tomatoes
- 1/2 cup sliced fresh asparagus tips
- 1/4 cup diced sweet white onion
- 2 fresh garlic cloves, minced
Instructions
- Remove cod from the package, pat dry and cut into 1-inch cubes.
- In a small bowl, toss cubed fish with Cajun seasoning.
- In a large frypan/skillet, heat 2 tablespoons of olive oil.
- Add garlic and onion and cook until onions soften and begin to brown.
- Add fish and remaining other ingredients and reduce heat to low.
- Cover and simmer until fish is cooked through, flaking easily and the pasta is heated through.
- Stir everything together and serve with a freshly baked baguette and a squeeze of lemon.
