Cajun Catfish Pasta

This Recipe Makes: 2 Generous Servings

Approximate Cook and Prep Time: 35-40 minutes

Suggested Pairing: Bubbles are great with spice, try a crisp sparkling Proseco with this full flavored dish!

Here’s What You Will Need:

1 package Superior Select Catfish Nuggets
12 oz. cooked linguine
2 tbsp Cajun seasoning
1 cup chicken broth
1/2 cup heavy cream
1 pint fresh grape tomatoes
1/2 cup sliced fresh asparagus tips
1/4 cup diced sweet white onion
2 fresh garlic cloves minced

Here’s How to Do It:

Remove Catfish Nuggets from package, cut into bite sized pieces and pat dry.
In a small bowl, toss cubed fish with Cajun seasoning.
In a large fry pan/skillet, heat 2 tbsp of olive oil.
Add garlic and onion and cook until onions soften and begin to brown.
Add fish and remaining other ingredients and reduce heat to low.
Cover and simmer until fish is cooked through, flaking easily and the pasta is heated through.
Stir everything together and serve with a freshly baked baguette and squeeze of lemon.
