Cactus Tilapia Tacos
This Recipe Makes: 2 Generous Servings
Approximate Cook and Prep Time: 30-40 minutes

Here’s What You Will Need:
1 package Superior Select Tilapia
4 corn flour tortillas
1/2 cup prepared fresh pico de gallo
1/4 cup Nopales (prepared jarred cactus )
juice of 1 lime
2 Tablespoons diced fresh mango
2 Tablespoons diced seedless cucumber
2 Tablespoons diced red onion
1/4 cup sour cream
Here’s How You Do It:
Preheat oven to 400 degrees
Remove fish from the package, pat dry, and season with salt and pepper
Place on a greased baking sheet and bake until fish flakes easily apart, approximately 15-20 minutes
While fish is cooking combine nopales with pico and lime juice and set aside
Then combine mango, cucumber, and onion with sour cream and set aside
As fish is finishing, blister the tortillas in a very hot heavy-bottomed fry pan
Remove fish from the oven and flake apart
Layer fish, nopales and cream mixture evenly among tortillas and enjoy!
