Avocado and Black Bean Perch Tacos

Always cook fish to an internal temperature of 145°F.
  • 1 package of Superior Ocean Perch
  • 2 corn or flour tortillas
  • 1/4 cup diced fresh tomato
  • 1/2 cup fresh avocado peeled, seed removed and diced
  • 1/4 cup canned black beans, drained and rinsed
  • 1 tbsp sour cream
  • 1 tsp adobo sauce
  • Juice of 1 lime
  • 2 tbsp fresh chopped cilantro
  1. Pre-heat oven to 400°F.
  2. Remove fish from the package and season with salt and pepper.
  3. Place on a greased baking sheet and bake until fish flakes easily apart (approximately 15-20 minutes).
  4. While fish is cooking combine remaining ingredients (minus cilantro).
  5. Season the mixture with salt and pepper and set aside.
  6. Heat a large heavy bottom fry pan over high heat and blister the tortilla.
  7. Place tortillas on serving platter, after fish is cooked break it apart and evenly distribute over tortillas.
  8. Top the fish with sour cream mixture and garnish with cilantro.
