Croissant Toast
charred scallion butter & French breakfast radish

Ingredients
Charred Scallion Butter
- 2 bunches green onions, trimmed, halved crosswise
- 1 tsp lemon zest
- 1 tsp lemon juice
- 2 sticks butter, room temperature (French cultured if you can find it)
- Kosher salt, freshly ground pepper to taste
Toasts and Assembly
- 3 croissant buns, sliced in half and toasted (Superior Foods Featured Item: #10877- (Madeline’s Pâtisserie)
- Charred scallion butter
- Thinly sliced radish
- Flaky seas salt to taste
Preparation
Charred Scallion Butter
- Char scallions over high grill heat or under broiler until speckled with black char. Allow time to cool before roughly chopping.
- Use an electric mixer to mix room temp butter on high speed. Scrape down the sides, add the remaining ingredients, and mix on medium to combine. Place in a sealable dish.
Toasts and Assembly
- Toast croissant bun halves on a sheet tray in a 350°F oven for 20 minutes, flipping in between.
- Smear each toast half with a generous amount of scallion butter, followed by radish slices and salt. Enjoy!
Tips
The rich, buttery croissants make this work the best, but if you’re in a pinch, a brioche would work as well.
