Feta Pesto Tilapia

This Recipe Makes: 2 Generous Servings

Approximate Cook and Prep Time: 30-40 minutes

Here’s What You Will Need:

1 package Superior Select Tilapia
2 tablespoons prepared fresh pesto
1/4 cup feta crumbles
2 tablespoons toasted pine nuts
1/4 cup diced fresh tomatoes
1/4 cup diced seedless cucumber
2 cups fresh baby spinach

Here’s How You Do It:

Preheat oven to 400 degrees
Remove fish from the package, pat dry, and season with salt and pepper
Place on a greased baking sheet
Coat fish evenly with 1/2 the pesto and feta cheese and place in the oven
Bake until fish flakes easily apart, approximately 15-20 minutes
While fish is cooking, combine remaining ingredients
Remove fish from oven and serve with the spinach and feta salad
