Mango Habanero Chicken Breast

Here’s What You Will Need:

1 package River City Meats Mango Habanero Chicken Breast

Here’s How You Do It:

Begin by deciding what topping you want to use:
fresh pineapple salsa – make your own here
honey teriyaki bbq sauce of your choice
cilantro sour cream – make your own here
passion fruit yogurt sauce (recipe below)

Passion Fruit Yogurt Sauce:
6 passion fruit
3/4 cup tangerine or orange juice
3 Tbs. sugar
3 cups low-fat Greek-style yogurt

Cut passion fruit in half, and scoop pulp and seeds into saucepan.
Add tangerine juice, sugar and 1/2 cup water.
Bring to a boil.
Reduce heat to medium low, and simmer 5 to 6 minutes, or until slightly thickened.
Strain out seeds, and cool.

Cooking the Chicken Breasts:
Grill for about 9-10 minutes. Flip the chicken breasts at the halfway point. Chef Jeff recommends grilling the chicken for about 10 minutes, flipping them at the halfway point in order to have beautiful sear marks on each side of the chicken.
Top chicken breasts with topping of your choice.
